Your journey begins with your arrival in Hobart, the capital of Tasmania. After settling in, you'll visit the historic Moorilla winery, located on the grounds of the renowned MONA (Museum of Old and New Art). Moorilla is celebrated for its limited collections of boutique wines crafted from cool-climate grapes, which are known for their high quality and distinctive terroir.
Your guide will lead a winery tour, explaining the grape varieties and winemaking techniques used to create these exceptional wines. After the tour, you'll have the opportunity to taste a selection of wines. As a special memento, you'll receive a beautifully packaged bottle of Muse wine, a tasteful souvenir from Tasmania.
Following the wine tasting, enjoy a leisurely lunch at The Source, MONA's flagship restaurant, which offers stunning views of the Derwent River and the surrounding hills. The menu features dishes inspired by French cuisine, prepared with fresh, locally sourced seasonal produce. Each dish is paired with carefully selected wines, creating a perfect harmony of flavours.
Later, you will check into a hotel that offers an exciting storytelling experience, complete with its own historical tours that uncover the secrets of both the hotel and the city. The main storyteller and his team possess knowledge of Tasmania's tales, some of which were thought to be lost over time.
The hotel features immaculately furnished luxury rooms with stunning views of Hobart's waterfront, and it is conveniently located near the historic Old Wharf. Guests can unwind in the in-room deep baths, visit the spa, and dine in the hotel's restaurant. The menu includes dishes made with fresh local seafood, selected meats, and seasonal vegetables, along with homemade desserts and cheeses. A wide selection of wines and unique cocktails will enhance your gastronomic experience.
After breakfast, your journey will continue through the Derwent Valley, passing through orchards and hop fields. The Derwent Valley is renowned for its wineries and historic estates that evoke the charm of a bygone era.
Upon arrival at Mount Field National Park, you'll be captivated by the diverse flora, ranging from dense eucalyptus forests to alpine heaths. As one of Tasmania's oldest national parks, it is celebrated for its stunning natural beauty. Your guide will lead you along a forest trail to the majestic Russell Falls, Horseshoe Falls, and the "tall trees" — eucalyptus trees among the tallest flowering trees in the world. The scenery is so breathtaking that every step will make you want to capture it with a photo.
Lunch will be organised at Agrarian Kitchen, a renowned Tasmanian restaurant specializing in dishes crafted from locally sourced produce, much of which is grown and harvested directly on the farm. A team of chefs, led by Chef Stephen Peake, practices ancient culinary crafts such as cheese making, smoking, fermentation, wood-fired cooking, bread baking, and curing meats to create dishes that reflect the true spirit of the place.
You'll end the day with a visit to the Bonorong Wildlife Sanctuary, where you'll have the chance to see Tasmanian devils, wombats, quolls, koalas, and other iconic Australian animals. Bonorong is not just a place to observe animals but also a centre dedicated to rescue and rehabilitation. The team here works tirelessly to conserve species that have long been extinct in other parts of Australia.
You'll even be able to hand-feed rare animals like eastern quoll, tawny frogmouth, ringtail possum, and the famous Tasmanian devil. After spending time with these beautiful creatures, you'll return to your hotel.
In the morning, you'll take a short walk to Franklin Pier, where your seafood culinary cruise will begin. From Hobart's waterfront, you'll sail down the River Derwent to Bruny Island on board a custom-built boat with a spacious enclosed cabin and luxurious leather seating. An unforgettable day and a real gourmet feast await you.
The first stop is a local salmon farm, where you'll see its breeding process. Next, you'll harvest fresh oysters straight from the sea — an opportunity to taste seafood caught before your eyes. Your guide will demonstrate diving for abalone and sea urchins and catching crayfish. These moments will allow you to become more familiar with and experience the marine ecosystem's diversity.
After an intense program on the water, we'll stop at one of Bruny Island's secluded beaches, where you can stroll and soak up the energy of untouched nature. A walk along deserted beaches with clear, turquoise water will be the perfect end to a sea adventure.
Once back on board, enjoy a delicious BBQ lunch featuring the freshest seafood, perfectly paired sides, and fine Tasmanian wines.
After lunch, you'll return to Hobart.
Today, you'll journey to the sunny eastern coast of Tasmania. As you travel, you'll pass through the charming coastal villages of Orford, Triabunna, and Swansea, each offering a glimpse into the island's rich history and stunning landscapes. These small settlements boast incredible scenery, historic architecture, and warm, welcoming locals.
Your first stop will be at Federation Artisan Chocolate, where you'll meet with a master chocolatier and discover the art of crafting sweet masterpieces. Sample a variety of chocolates made from natural local ingredients, and pick up a few bars as delightful souvenirs.
Next, you'll head to a local winery to taste wines from Tasmania's cool-climate grapes.
After lunch, the adventure continues to Freycinet National Park, one of Tasmania's most picturesque spots. Take a walk to the Wineglass Bay lookout and lose yourself in the beauty of this place: secluded bays, delicate pink granite peaks, pristine white sand beaches, and the vibrant blue waters of the Tasman Sea.
In the evening, you'll check into a spacious, modern hotel room in Freycinet National Park's heart. Your room will offer all the amenities needed for a perfect retreat, including a king-size bed, an outdoor terrace with a bathtub overlooking the Hazard Mountain Range, and a contemporary bathroom.
The hotel offers several dinner options. The fine-dining restaurant Overlooking Great Oyster Bay is ideal for a romantic seafood-focused dinner. Alternatively, the cosy bistro offers a relaxed atmosphere with casual meals and mouthwatering snacks. With its warm and inviting ambiance, the bar and lounge area is perfect for starting the evening with an aperitif or winding down with a cocktail.
After breakfast, you’ll leave Tasmania’s east coast and head to the picturesque wine region in northern Tasmania. Here, you’ll visit the renowned Josef Chromy winery in a historic manor dating back to the 1880s. Immerse yourself in the winemaking process, from grape seed to glass. Knowledgeable guides will share the history of Josef Chromy wines, introduce you to the ampelographic vineyard to help you understand the characteristics of each grape variety, and demonstrate the traditional method of producing sparkling wines. You’ll then return to the cellar for a tasting and a two-course lunch made with the finest Tasmanian produce, accompanied by exclusive wines.
After lunch, you’ll head to Cataract Gorge, just minutes from downtown Launceston. This unique wilderness oasis offers impressive views of the South Esk River and surrounding granite cliffs. You can stroll across the suspension bridge, admire rare plant species, and encounter peacocks roaming freely. The gorge, estimated to be 140 million years old, also features historic Victorian buildings and beautifully manicured gardens.
For an even more immersive experience, take a ride on the famous Gorge Scenic Chairlift, which offers a bird’s-eye view of Cataract Gorge. The slow speed of the lift allows you to fully appreciate and photograph the majestic dolerite cliffs and the South Esk River, creating a sense of being miles away from the modern world.
At the end of the day, your guide will take you to the airport or a pre-selected hotel, where you’ll spend an extra night if your departure is scheduled for the following morning.
